You can make these ice lollies with your kids and enjoy them knowing they are not only nutritious but incredibly tasty and refreshing. Best yet is they are easy enough to make that you can include your kids with in the cooking.
Plus this recipe is one that you can change up throughout the year. Try this berries and honey version for Rosh Hashanah or mix and match with fruits like oranges, mangos, blackberries or raspberries. If you don’t have ice lolly molds on hand you can pour the mixture into ice cube trays and save for smoothies, or fill a plastic cup halfway with the mixture.

Very Berry and Coconut ice lollies
Ingredients:
1 (13.5 oz.) can unsweetened full fat coconut milk
1 teaspoon vanilla extract
3 tablespoons honey
1 cup very berry puree (see recipe below) or your favourite fruit puree*
*this is a great way to make use of remaining fruit or veggie pouches that your kids may have tried out but not loved.
Preparation:
In a large mixing bowl with a spout, combine coconut milk, vanilla and honey and whisk until combined.
Pour into ice lollies molds to fill by 2 inches. Freeze for 10 minutes to create a base.
After 10 minutes, you can alternate with berry puree and coconut, using a wooden skewer to swirl and create a pattern. If you don’t feel like the fuss of a swirl, you can blend the puree and coconut together from the beginning.
Once full, add the ice lollies sticks to your mold and freeze the ice lollies until set (from 4 hours to overnight).
To eat ice lollies, run the molds for several seconds under hot water to allow you to easily remove the ice lollies. Savour each delicious bite!
Very Berry Puree
Ingredients:
½ cup chopped strawberries
½ cup raspberries
½ cup blueberries
Preparation:
Wash ingredients thoroughly then puree in a blender until smooth.
